Æbleskiver is a Danish traditional Christmas dessert or afternoon snack, that is typically enjoyed during December. The dough is similar to pancake dough and is a very popular dish in every Danish home.
Æbleskiver is served with powdered sugar and berry jam and we often drink Glogg (Gløgg) on the same occasion. The name “Æbleskiver” means “Apple Slices” but nowadays it is made without apples, although I prefer to fill the Æbleskiver with an apple filling so that the recipe lives more up to its name.
Note: To make this recipe, you need to buy a Æbleskive pan, specially made for Æbleskiver. Let me know what you think about this Danish Christmas dish!
Aebleskiver (Æbleskiver) with apple filling recipe
Ingredients
Æbleskiver
- 1 7/8 cups (250 grams) all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon ground cardamom
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 eggs
- 1 5/8 cups (4 deciliters) buttermilk
- 1/4 cup (50 grams) melted butter + extra to bake
Apple filling (optional)
- 2 sour apples, cubed
- 1 teaspoon vanilla sugar
- 1/3 cup (70 grams) granulated sugar
- 1/4 cup (0.60 deciliters) water
Serve
- Berry jam
- Powdered sugar
Instructions
Apple filling (optional)
- In a small saucepan, add all ingredients and bring to a boil.
- Let simmer for about 30 minutes until all liquid has evaporated and the apples are golden and caramelized. Set aside.
Æbleskiver
- Mix all-purpose flour, sugar, ground cardamom, baking soda, and salt in a medium-sized mixing bowl.
- Separate egg whites and egg yolk.
- In another mixing bowl, beat egg whites until stiff.
- Add the egg yolks and buttermilk to the flour mixture and mix well. Add the melted butter and continue mixing until the dough is smooth.
- Add the stiff egg whites to the dough and stir carefully.
- Heat up the æbleskive pan, and add a bit of butter in each hole.
- When the pan is hot, fill up each hole with 2/3 dough. Remember the dough will rise.
- After a few minutes, flip the æbleskive on the side and add 1 teaspoon of apple filling. Use a thin metal stick or alternatively a fork. Fill up the hole with more dough and turn the æbleskive all the way around. Let it bake for a few minutes until all sides are golden.
- Serve the æbleskiver immediately. The æbleskiver is supposed to be dipped in a berry jam and powdered sugar.
