Remove the larger stems from the ground elder and wash the leaves thoroughly.
Place the ground elder in a pot or pan with a little water.
Stir and sauté until they have wilted. Set aside.
Crust
Mix the ingredients together with a spoon, then knead the dough with your fingers.
Place the dough in the refrigerator.
Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
Grease a quiche dish and dust it with flour.
Take the dough out of the refrigerator and roll it out to fit the quiche dish. Prik holes in the crust with a fork and place parchment paper on top of the dough to prevent it from puffing up.
Pre-bake the crust for 10 minutes.
Bechamel Sauce
Melt the butter in a saucepan. Once the butter has melted, add the flour and stir well.
Pour whole milk into the saucepan and whisk until it boils and thickens.
Season with salt, pepper, and nutmeg. Set aside.
Assembling the Quiche
Mix the ground elder with the bechamel sauce and spread the filling evenly over the pre-baked crust.
Bake the quiche for 30 minutes and serve immediately with a fresh salad.
