Chanterelle, truffle oil and parmesan pizza with homemade tomato sauce

Ingredients
  

Dough

  • 2.5 deciliter (1 cup) lukewarm water
  • 0.5 teaspoon sugar
  • 1.5 teaspoons salt
  • 1 tablespoon yeast, dried
  • 1.5 tablespoons olive oil
  • 200 grams (1 1/3 cup) all-purpose flour
  • 200 grams (1 1/3 cup) durum flour

Topping

  • 200 grams (7 oz) chanterelles
  • Mozzarella, shredded
  • Parmesan cheese, freshly grated
  • Truffle oil

Tomato sauce

  • 250 grams (9 oz) fresh tomatoes
  • 2 tablespoons olive oil
  • 1 clove garlic
  • 10 basil leaves
  • 2 teaspoons oregano, dried
  • 1 teaspoon coarse salt
  • 1 teaspoon sugar

Instructions

The dough

  • In a medium-sized bowl, mix water, sugar, and dried yeast and stir thoroughly until the yeast has dissolved. Wait for the yeast to be activated (bubbles) for about 10 minutes.
  • Add salt and olive oil.
  • Add all-purpose flour and durum flour a little at a time while stirring. You can also use your kitchen machine if it has a dough hook.
  • Knead the dough well.
  • Leave to rise for 2 hours covered in a kitchen towel.
  • Pour a bit of flour onto the kitchen table and divide the dough into 2. Gently, press out the dough using your fingers. Do not use a rolling pin since all the air in the dough will disappear.

Tomato sauce

  • Blend all ingredients in a blender.
  • Remove if necessary, a little of the liquid so that the sauce is not too watery.

Make the pizza

  • Spread out the tomato sauce in a thin layer onto the pizza. Afterward, add shredded mozzarella cheese and the chanterelles.
  • Bake at the bottom of the oven at the highest possible degrees for approx. 8-12 minutes depending on the heat of the oven. The pizza is ready when the bottom is golden brown.
  • Serve the pizza with freshly grated parmesan and drizzle with truffle oil.
