Blinis with morel mushrooms

Ingredients
  

Morels

  • 2 tbsp butter
  • 50 g dried morels (1.8 oz) or 500 g fresh (1.1 lb)
  • 80 ml (1/3 cup) heavy cream
  • Salt and pepper

Accompaniments

  • Creme Fraiche 18%
  • 1 red onion, finely chopped
  • Dill, chives, wild garlic or other greens for garnish

Blinis

  • 225 g (1 3/4 cups) all-purpose flour
  • 2/3 tsp baking powder
  • 1 tsp sugar
  • 2/3 tsp coarse salt
  • 3 eggs
  • 225 ml (1 cup) whole milk
  • 50 g (3.5 tbsp) butter

Instructions

Morels

  • If you're using dried morels, soak them in cold water for at least 30 minutes, or until soft. Then drain the water and pat them dry with a paper towel. If you're using fresh morels, make sure to clean them thoroughly. If the morels are very large, you can cut them into smaller pieces.
  • Melt the butter in a large pan over medium heat. Add the soaked or fresh morels and fry for 4 minutes over low heat. It is very important that the morels do not get too much heat.
  • Add the heavy cream and let it simmer for another 7 minutes. Stir and season with salt and pepper.

Blinis

  • Mix the dry ingredients in a bowl.
  • Melt the butter.
  • In another bowl, whisk the eggs and milk together. Pour the dry ingredients into the wet ingredients and add the melted butter. Whisk the batter well until it is smooth and without lumps.
  • Heat a blini pan and melt some butter in each hole. When the pan is hot, pour batter into each hole and fry on each side for 1-2 minutes until they rise a bit and become golden.
  • Repeat until all the batter is used.

To serve

  • Place a small spoonful of creme fraiche on each blini and top with morels and some finely chopped red onion. Garnish with your favorite greens and serve immediately.
