Funnel chanterelle toast is a super tasty and not least easy dish to make. Funnel chanterelles have a deep, unique taste of umami and mushrooms, and go really well with butter, heavy cream and bread.

Funnel chanterelles can be found in autumn in deciduous and coniferous forests. They love damp moss, and once you’ve found the first one, there are often lots of them around. Funnel chanterelles are also known as winter chanterelles or yellow foot.

Funnel chanterelle toast can be eaten as an appetizer, lunch or whenever you fancy a snack.

Ingredients
  

  • 200 grams (7 oz) funnel chanterelles
  • 1 tablespoon butter
  • ½ onion, finely chopped
  • ½ deciliter (¼ cup) heavy cream
  • Salt and pepper
  • Freshly chopped parsley
  • 2 slices bread

Instructions

  • Tear the funnel chanterelles into two from the cap and downwards (use your hands) and check each mushroom for dirt or insects. Funnel mushrooms are generally very clean mushrooms.
  • Melt butter over medium-high heat.
  • Sauté the onion for a minute and add the funnel chanterelles. Turn up the heat and sauté for about 3 minutes or until the liquid has evaporated.
  • When the liquid has evaporated, turn down the heat and add the heavy cream.
  • Taste with salt and pepper.
  • Toast some slices of bread in butter on a frying pan.
  • Serve the funnel chanterelle toast with freshly chopped parsley on top.
