One of the most popular ways of using elderflower heads is by making them into an elderflower cordial. The elderflower cordial can be drunk with still or sparkling water, added to an elderflower gin cocktail, made into aromatic icing, or used in these Elderflower and Lemon Cupcakes.

The whitish elderflowers decorate the summer landscape and spread out their scents. When walking by an elder tree (Sambucus nigra), you will immediately smell the flowers, even from distance. Elderflowers can be foraged in early summer and can be used in a variety of ways.

Ingredients
  

  • 20 elderflower heads
  • 2 lemons, unsprayed and sliced
  • 3 cups (600 grams) sugar
  • 5 cups (2 liters) water

Instructions

  • Remove any insects from the elderflower heads and cut off the stems. Place the elderflower heads in a large bowl.
  • Place lemon slices, sugar and water in a pot and bring to a boil. Pour the hot liquid over the elderflower heads and cover with a lid. Let it infuse for 12 hours on the kitchen counter.
  • Strain the liquid and pour it into sterilized bottles. The elderflower cordial will keep for 30-40 days in the fridge.
